Cauliflower Mint Kulcha recipe is a tasty flatbread. This popular vegetarian Punjabi recipe is a perfect breakfast, lunch or dinner dish. A small dollop of butter or makhan makes it more delectable. Serve this piping hot stuffed kulcha with beetroot raita, coriander chutney or any curry. 

Ingredients

  • 3 Tbsp Wheat Flour(Whole)
  • 3 Tbsp Cauliflower (Grated)
  • 1.5 Tbsp Refined Wheat Flour
  • 1.5 Tsp Cow Milk
  • 2 Tsp Curd
  • 2 Tsp Mint (Pudina) Chopped
  • 1/4 Tsp Dry Mango Powder
  • 1/4 Tsp Cumin (Jeera) Powder
  • 1/8 Tsp Red Chilly Powder
  • 1/4 Tsp Salt
  • 1 Tsp Clarified Butter (Ghee)
  • As Required Water

Method

For dough
  • Step 1

    In a mixing bowl, add whole wheat flour, maida, curd, milk and salt

  • Step 2

    Combine all ingredients well and knead into a soft dough and keep aside

For filling
  • Step 1

    In a small bowl, add grated cauliflower, salt, red chilly powder, dry mango powder, jeera powder, chopped pudina leaves and mix well

For kulcha
  • Step 1

    Roll the dough and place the stuffing

  • Step 2

    Fold and seal the dough

  • Step 3

    Flatten the dough to form the kulcha

  • Step 4

    Apply water on the base of the kulcha and transfer to hot tawa

  • Step 5

    Roast the kulcha with ghee on medium flame

  • Step 6

    Roast both sides till light brown spots appear

  • Step 7

    Serve hot with your choice of accompaniment
