Ingredients

  • 1/2 Cup Diced Eggplant
  • 1/4 Cup Chopped Spinach(Palak)
  • 1 Tbsp Chopped Onion
  • 1.5 Tbsp Chopped Tomato
  • 1/2 Tsp Red Chilly Powder
  • 1/4 Tsp Garam Masala
  • 1/8 Tsp Turmeric Powder(Haldi)
  • 1/4 Tsp Cumin Seeds(Jeera)
  • 1/4 Tsp Mustard Seeds(Rai)
  • 1/4 Tsp Salt
  • 1 Tsp Oil
  • As Required Water

Method

Preparation
  • Step 1

    Heat oil in kadhai, add cumin seeds, mustard seeds and mix well

  • Step 2

    Add chopped onion and saute till golden brown

  • Step 3

    Add red chilly powder, garam masala, turmeric powder, chopped tomato and water as required

  • Step 4

    Mix it well and let it cook for some time

  • Step 5

    Add diced eggplant and stir it well

  • Step 6

    Add salt, spinach and give it a nice stir. Add little water and mix it well. Cover & cook it till properly done

  • Step 7

    Serve hot
