Ingredients

For Corn Idli
  • 1/2 Cup Sweet Corn
  • 1/4 Cup Semolina (Suji)
  • 1/4 Cup Curd
  • 1 Tbsp Chopped Orange Carrot
  • 5 No. Curry Leaves (Kadi Patta)
  • 1/2 Tsp Ginger Garlic Paste
  • 1/2 Tsp Mustard Seeds (Rai)
  • 1/4 Tsp Salt
  • 1 Tsp Fruit Salt
  • 2 Tsp Oil
For Coriander Chutney
  • 1 Cup Chopped Coriander Leaves
  • 2 Tbsp Peanuts
  • 1 Tbsp Lemon Juice
  • 2 Tsp Chopped Green Chilli
  • 1 Tsp Salt
  • As Required Water
  • 0.14 Chopped Cup Coriander Leaves
  • 0.21 Tbsp Peanuts
  • 0.27 Chopped Tsp Green Chilli
  • 0.14 Tbsp Lemon Juice
  • 0.14 Tsp Salt
  • 2.74 ml Water

Method

Pre Preparation
  • Step 1

    Boil and coarsely grind sweet corn

For Chutney
  • Step 1

    Grind all chutney ingredients and make coriander chutney

Preparation
  • Step 1

    In a bowl add curd, semolina and mix well

  • Step 2

    Now add boiled and ground sweet corn, chopped carrot, ginger garlic paste and salt

  • Step 3

    In a pan, heat oil, add mustard seeds, curry leaves and allow to crackle

  • Step 4

    Add the tadka in the prepared idli batter and mix well

  • Step 5

    Allow the batter to rest for 10 min

  • Step 6

    Add fruit salt in batter and mix Well

  • Step 7

    Grease idli moulds with oil, pour in the prepared idli batter

  • Step 8

    Steam the batter for 15 minutes

  • Step 9

    Serve hot corn idlis with coriander chutney
