Here’s an indian, vegetarian and jain soup. This is a low carb and gluten free soup that you can slurp without guilt. This rich savoury Spinach Beetroot Soup, made with ingredients like mixed vegetables , is super filling and tasty too. It can be had for your evening, dinner or lunch meal with broccoli carrot salad with olive oil honey dressing, cheesy corn carrot sandwich, russian salad, whole wheat bread pumpkin hummus sandwich or chickpea salad.

Ingredients

  • 1/2 Cup Chopped Spinach (Palak)
  • 2.5 Tbsp Grated Beet Root
  • 2 Tbsp Chopped Onion
  • 1 Tbsp Cream
  • 1 Tsp Garlic Paste
  • 1/4 Tsp Black Pepper Powder
  • 1/4 Tsp Salt
  • 1 Tsp Butter
  • As Required Water

Method

Pre Preparation
  • Step 1

    Blanch palak and make puree

Preparation
  • Step 1

    Melt butter in a frying pan at a low flame. Add chopped onion and sauté well

  • Step 2

    Once the onions turn slightly translucent, add garlic paste and sauté

  • Step 3

    When garlic turns slightly brown pour in the previously pureed palak and mix well

  • Step 4

    Once the soup starts simmering add grated beetroot and stir it well

  • Step 5

    Then add water, salt, black pepper and mix well

  • Step 6

    Fold in cream and allow the soup to simmer for few more minutes

  • Step 7

    Serve hot
