Ingredients

  • 1/2 Cup Diced Brinjal
  • 1/8 Cup Diced Tomato
  • 1/8 Cup Diced Green Capsicum
  • 1/8 Cup Diced Red Capsicum
  • 1/8 Cup Chopped Yellow Capsicum
  • 4 No. Green Olives
  • 1 Tsp Chopped Coriander Leaves
  • 1/2 Tsp Lemon Juice
  • 1/8 Tsp Black Pepper Powder
  • 1/8 Tsp Salt
  • 1 Tsp Oil

Method

Preparation
  • Step 1

    In a kadhai, heat oil, diced eggplant, and saute well

  • Step 2

    Then add mixed bell peppers and stir fry

  • Step 3

    Remove from the flame and transfer the vegetables to a mixing bowl

  • Step 4

    To the stirfried vegetables, add diced tomato, sliced green olives, salt, black pepper powder, chopped coriander leaves, lemon juice and mix well

  • Step 5

    Serve fresh
