Ingredients
- 1/2 Cup Diced Brinjal
- 1/8 Cup Diced Tomato
- 1/8 Cup Diced Green Capsicum
- 1/8 Cup Diced Red Capsicum
- 1/8 Cup Chopped Yellow Capsicum
- 4 No. Green Olives
- 1 Tsp Chopped Coriander Leaves
- 1/2 Tsp Lemon Juice
- 1/8 Tsp Black Pepper Powder
- 1/8 Tsp Salt
- 1 Tsp Oil

Preparation
Step 1
In a kadhai, heat oil, diced eggplant, and saute well
Step 2
Then add mixed bell peppers and stir fry
Step 3
Remove from the flame and transfer the vegetables to a mixing bowl
Step 4
To the stirfried vegetables, add diced tomato, sliced green olives, salt, black pepper powder, chopped coriander leaves, lemon juice and mix well
Step 5
Serve fresh
