For Uttapam
- 1 Tbsp Rice
- 1 Tsp Black Gram Dal (Urad)
- 2 Tsp Chopped Coriander Leaves
- 1/8 Tsp Salt
- 1 Tsp Oil
- As Required Water
For Sambhar
- 1/8 Cup Pigeon Pea Dal (Tur)
- 1 No. Drumstick
- 1/8 Cup Diced Brinjal
- 1/8 Cup Diced Capsicum
- 1/8 Cup Chopped Tomato
- 1/4 Tsp Grated Fresh Coconut
- 1/4 Tbsp Tamarind
- 1/8 Tsp Chopped Coriander Leaves
- 2 No. Curry Leaves (Kadi Patta)
- 1/8 No. Red Chilly
- 1/8 Tsp Mustard Seeds (Rai)
- 1/8 Tsp Sambhar Powder
- 1/8 Tsp Asafoetida (Hing)
- 1/8 Tsp Turmeric Powder (Haldi)
- 1/8 Tsp Salt
- 1/4 Tsp Oil
- As Required Water
Method
Pre Preparation
Step 1
Soak 1 tbsp rice and 1 tsp urad dal for two hours
Step 2
Grind it and ferment overnight
For sambhar
Step 1
In a kadai heat 2 tsp oil
Step 2
Add 1/2 tsp rai, 4 kadi patta leaves, 2 red chillies, 1/2 tsp haldi, 1/2 tsp red chilly powder, 1 tbsp sambhar powder and saute
Step 3
Add 1/4 cup julienne onion, 1/4 cup diced tomato, 1 diced drumstick, 2 tbsp chopped carrot, 2 tbsp chopped brinjal, 2 tbsp chopped pumpkin and mix well
Step 4
Now add 1/2 tsp salt, boiled tur dal, 1 tbsp tamarind pulp and boil well
For uttapam
Step 1
Mix the batter in a bowl with 1/8 tsp salt and 2 tsp chopped coriander leaves
Step 2
On a heated pan, pour a ladle of the prepared batter
Step 3
Spread it and roast with 1 tsp oil
Step 4
Flip and roast until both sides are completely cooked
Step 5
Serve hot with sambhar
