For White Cowpea Soaked Boiled
  • 2 Tbsp Cowpea
  • As Required Water
For Cowpea Soup
  • 1/2 Tbsp Fresh Cream
  • 2 Tbsp Diced Onion
  • 1/2 Tsp Chopped Garlic
  • 1/4 Tsp Mixed Herbs
  • 1/8 Tsp Black Pepper Powder
  • 1/4 Tsp Salt
  • 1/2 Tsp Olive Oil
  • As Required Water

Method

Pre Preparation
  • Step 1

    Soak cowpea overnight and pressure cook

Preparation
  • Step 1

    Heat olive oil in a frying pan at a low flame and add diced onion, chopped garlic and sauté

  • Step 2

    Once the onions start turning translucent, add the previously cooked cowpea and add water as required and stir well

  • Step 3

    Once the soup starts simmering, add black pepper powder, salt, mixed herbs, cream and mix properly

  • Step 4

    Pour the soup in a blender and blend till a soup like consistency is obtained

  • Step 5

    Serve hot
